1. Kuchumber salad
This favourite Indian salad is perfect for summers. It has such fresh and tart flavours, and my personal favourite to snack on anytime.
Ingredients:
- 1 small onion- finely chopped.
- 2 tomatoes- chopped small
- 1 big cucumber- chopped small
- 1 green chilly or as per your wish – finely chopped and deseeded if you want less spicy.
- 1/4 tablespoon of cayenne/paprika or red chilly powder.
- 1/4 tablespoon of freshly ground black pepper
- 1/4 tablespoon of black salt( or to taste)
- 1 tablespoon of fresh lime juice
- freshly chopped coriander leaves.
Method:
- Mix in the cucumber, tomatoes, and onions together with the green chilly.
- Mix in all the spices (paprika, black pepper, salt) and pour over the lime juice.
- Garnish with the coriander leaves.
2. Carrot salad
This fresh summer salad, with superfoods like Carrots and Beetroots, which are packed with antioxidants, rich minerals, and vitamins, is a perfect way to get taste and health together.
Ingredients:
- 2 cups of shredded Carrot (2-3 carrots)
- 1 cup of shredded Radish
- 1 cup of shredded Beetroot (1 medium sized raw beetroot)
- 1/2 tablespoon of red pepper/cayenne powder, paprika
- 1/4 tablespoon of roasted and ground cumin powder
- 1/4 tablespoon of ground cinnamon powder
- black salt (to taste)
- 2 tablespoons of fresh lime juice
- Fresh coriander leaves
Method:
- Add the shredded carrot in a large bowl. Mix in the beetroot after washing the beetroot in a sieve lightly, and drying with a paper towel to get rid of the excess colour.
- In another small bowl, mix in together the paprika, salt, cumin powder, cinnamon powder, then add the lime juice and whisk again till smooth.
- Pour over the mix into the shredded carrot and beetroot, and coat them lightly with the mixture.
- 4. Add freshly chopped coriander leaves.
3. Pasta salad
Another beautiful. colourful, fresh and extremely delicious salad to have it as a snack or a complete meal.
Ingredients:
- Half a packet of tri-coloured Pasta
- 2 cups of chopped green peppers. (You can add yellow or red peppers if you wish to)
- 2 cups of chopped tomatoes
- 1 and a half cup of chopped red onions.
- 1/2 cups of diced black olives
Dressing:
- 3/4 cup of red wine vinegar
- 3/4 cup of extra virgin olive oil
- 1/4 tablespoon of sugar (you can skip this if you want)
- 1 tablespoon of Oregano
- 1 tablespoon of black salt
- 1/2 tablespoon of black pepper (freshly ground)
Method:
- Cook the pasta according to the instructions on the packet. After it is cooked, run it under the cold water in a large sieve or strainer, and put it in a big bowl.
- Mix in the dressing together in a separate bowl and keep aside.
- Mix all the veggies with the Pasta, the peppers, onions, tomatoes, and olives.
- Pour over the dressing in the pasta and coat the pasta and veggies well with the dressing by mixing lightly with a spatula.
- You can put more olive oil and vinegar, as per your wish for consistency.
- Chill it for some time.
- You can add cheese if you want just before serving, if you wish to.
4.Aloo chana
This salad is so delicious, and extremely healthy. You can have it as a side salad or between meals.
Ingredients: (3-4 people)
- 500 grams of black chana or chickpea (chhole)
- 2 medium sized potatoes or as per your wish.
- half a capsicum or green pepper, chopped
- half a red pepper, chopped
- 1 tomato, chopped
- 1/2 red onion, chopped
- half cup of chopped cucumber
- 2 green chilies (deseeded if you want less spicy) – You can skip this step
- Raw mango. chopped very small. (Optional)
- half a cup of feta cheese or fresh paneer
Dressing:
- 1 tablespoon of fresh lime juice
- 1/2 tablespoon of black salt (or as per your taste)- Please check for the salt as the chana will already have it.
- 1/2 tablespoon of freshly ground pepper
- 1/2 tablespoon of roasted cumin powder
- Chaat masala (you can skip this)
Method:
- Soak the chana overnight. Boil the chana or chhole in a pressure cooker with salt and a pinch of turmeric and red chilly powder.
- Boil the potato and chop them into small cubes and keep aside.
- Mix the chana with the potatoes, and throw in all the veggies, the peppers, onions, chillies, cucumber and tomatoes and mix well.
- Mix in the salt after checking the taste , and then mix in the black pepper and roasted cumin powder.
- Pour the fresh lime juice
- Sprinkle the chaat masala (optional)
5.Sprouts salad
This salad is refreshing, flavorful, and packed with vital nutrients.
Ingredients:
- Sprouted moong beans
- 1 cup chopped onion
- 1 cup chopped tomato
- 1 green chilli, finely chopped (or as per your taste, optional)
- 1/4 red chilly powder
- 1/2 tablespoon of chaat masala
- 1 tablespoon of fresh lime juice
- Rock salt or black salt(as per taste)
- 1/4 fresh black pepper, grounded
- Freshly chopped coriander leaves
Method:
- Boil the sprouted moong beans
- Mix the cooked moong beans with all the veggies, onions, tomatoes, green chilly, and put in a large bowl.
- Mix in the salt, chaat masala, and black pepper.
- Pour over the fresh lime juice
- Throw in the fresh coriander leaves for garnishing.
6.Potato salad:
Another one of my favorite salads. This salad is creamy, delicious, and full of flavors. I think of it as my comfort food and can have it anytime 🙂
Ingredients:
- 4 medium sized Potatoes
- 1/2 an onion, diced small
- 1 cup of mayonnaise
- 1/2 tablespoon of yellow mustard sauce
- 1 tablespoons of Cider Vinegar
- 1/2 tablespoon of freshly chopped dill (optional)
- 1/2 cup of Freshly chopped spring onions.
- 1/2 tablespoon of garlic powder
- 1/2 tablespoon of rock salt or black salt (or as per taste)
- 1/2 tablespoon of ground black pepper
- 3-4 eggs, boiled (optional)
- Paprika (red)
Method:
- Boil the potatoes in water with salt, once cooked, peel and dice the potatoes into small to medium cubes.
- Put the potatoes in a large bowl.
- Add in the onions, spring onions and give it a mix
- Mix in mayonnaise, mustard sauce, vinegar, and dill
- Add in the boiled eggs (optional)
- Mix in the garlic powder, salt, black pepper
- Sprinkle the paprika (as per taste)
